Protein Banana-Blueberry Baked Oats

Level up your breakfast meal prep with this delicious baked oatmeal recipe!


Low-effort, healthy & delicious is right up my alley. You can easily prepare on a busy day or day off to set yourself up for success during the busy week.


INGREDIENTS

  • 2 cups rolled oats

  • 1 cup cottage cheese

  • 2 ripe bananas, mashed

  • 2 eggs

  • 1/4 cup maple syrup

  • 1.5 cups milk (dairy or non-dairy)

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup blueberries (I used frozen wild blueberries)


METHOD

  1. Heat oven to 375F & prepare an 8x8 dish by greasing with cooking spray or oil.

  2. In one large bowl, mix cottage cheese, bananas, maple syrup, eggs, milk & vanilla.

  3. Stir in the oats, cinnamon, baking powder & salt. Fold in blueberries.

  4. Pour into the 8x8 dish.

  5. Bake for 45-60 minutes. You’ll have to check for doneness. The center should be set & firm.


Some optional toppings can be extra blueberries or some chopped nuts.
