Spaghetti with Veggies

This spaghetti recipe is perfect for Meatless Mondays and otherwise busy weekdays. It makes plenty so you definitely have some leftovers for tomorrow!


Ingredients:

12 oz spaghetti

1 zucchini

1 container mushrooms

1 white onion

1 can peeled whole tomatoes

4 handfuls spinach

5 fresh basil leaves, chopped

1T tomato paste

1T minced garlic

2 tsp Italian seasoning

Salt & pepper to taste

Optional additions: 1tsp sugar and/or balsamic vinegar.


Preparation is quite simple.

  1. Prepare your spaghetti (or other pasta) according to package instructions.

  2. While the pasta is cooking, heat oil in a pan. Add diced onions and cook for 3-5 mins.

  3. Add garlic & other veggies. Cook for another 5 minutes.

  4. Next, youll add tomatoes, tomato paste & veggies. Use a spoon or spatula to chop the whole tomatoes, creating a chunky sauce. Simmer 10 mins.

  5. Remove from heat & add basil & spinach.

  6. Top cooked spaghetti with sauce, and optionally top with cheese.
